Help choosing a system for mobile use...

Hello All,
I am a TD at several local high schools and have found the need to have a mobile/backup machine for both lighting design/control (ETC Nomad, w/Augment3d) and projection design/control (Isadora 3).
Originally, I was thinking about fabricating a small fly rack that would house an intel NUC, 2 touchscreen monitors, and the necessary IO gear. This would be perfect for the backup lighting rig... but I feel would be limited for Isadora.
I will more than likely never need more than 3 projectors (beamers) and for almost all productions it would be a single unit. The content will be stills or pre-rendered/composited videos (1920x180 mp4's). All the content would be stored on an external NVMe SSD connected via USBc. It would be nice to have enough CPU and GPU to handle some of the FX capabilities of I3 , but that's a bonus.
So, where I can use your help is in pointing me towards a NUC that has the graphic capabilities necessary to handle I3 in the above situation, or perhaps a laptop (maybe a gamming model like an Acer Legion5 ...?) Any practical experience insight would be greatly appreciated!

The NUC in my sig works perfectly for Isadora. I use three projectors and a screen for the program itself. I know it's a bit out of date, but it's great. I throw quite a lot at it, and it seldom falters.

Thanks for the reply Mark.I've used NUC's in my streaming rig, Dante Audio rig, and a photo booth, I love the small form factor and flexibility.
I'd love to hear from someone who's used or is using a gaming laptop too. I have zero experience with those
Did the nuc I lined to seem sufficient enough for I3? It's more than enough for the ETC Nomad software.
